Streaky Rasher Wrapped Chicken Breasts

Serves 4
Ingredients:
6-7 Fresh basil leaves
30 ml water
2 (225 g) chicken breasts, cut each breast in half horizontally
12 streaky rashers
What you’ll need from the store cupboard:
30 ml fish sauce 15 g palm sugar
Salt and ground black pepper, as required
1½ tsps. honey
Instructions:
Preheat the Air fryer to 185 ºC and grease an Air fryer basket.
Cook the palm sugar in a small heavy-bottomed pan over medium-low heat for about 3 minutes until caramelized.
Stir in the basil, fish sauce and water and dish out in a bowl. Season each chicken breast with salt and black pepper and coat with the palm sugar mixture.
Refrigerate to marinate for about 6 hours and wrap each chicken piece with 3 streaky rasher strips.
Dip into the honey and arrange into the Air Fryer basket.
Roast for about 20 minutes, flipping once in between.
Dish out in a serving platter and serve hot.
