Ingredients:

5 (170 g) catfish fillets

235 ml milk

180 g cornmeal 35 g plain flour

Olive oil

cooking spray

What you’ll need from the store cupboard:

2 tsps. fresh lemon juice

125 g mustard

2 tbsps. dried parsley flakes

¼ tsp. red chilli powder

¼ tsp. cayenne pepper

¼ tsp. onion powder

¼ tsp. garlic powder

Salt and ground black pepper, as required

 

Instructions:

Preheat the Air fryer to 200 ºC and grease an Air fryer basket.

Mix catfish, milk, and lemon juice in a large bowl and refrigerate for about 30 minutes.

Put the mustard in a shallow bowl and mix the cornmeal, flour, parsley flakes, and spices in another bowl.

Remove the catfish fillets from milk mixture and coat each fish fillet with mustard.

Roll evenly into the cornmeal mixture and arrange in the Air fryer basket.

Spray with the olive oil cooking spray and air fry for about 10 minutes.

Flip the side and air fry for about 5 more minutes.

Dish out the catfish fillets onto serving plates and serve hot.
