Ingredients:

35 g plain flour

2 eggs

70 g sesame seeds, toasted

60 g panko breadcrumbs

4 (170 g) frozen haddock fillets

What you’ll need from the store cupboard:

1/8 tsp. dried rosemary, crushed Salt and ground black pepper, as required 45 ml olive oil

 

Instructions:

Preheat the Air fryer to 200 ºC and grease an Air fryer basket.

Place the flour in a shallow bowl and whisk the eggs in a second bowl.

Mix sesame seeds, breadcrumbs, rosemary, salt, black pepper and olive oil in a third bowl until a crumbly mixture is formed.

Coat each fillet with flour, dip into whisked eggs and finally, dredge into the breadcrumb mixture.

Arrange haddock fillets into the Air fryer basket in a single layer and roast for about 14 minutes, flipping once in between.

Dish out the haddock fillets onto serving plates and serve hot.
