Breaded Prawns with Lemon Zest

Serves 3
Ingredients:
70 g plain flour
2 egg whites
120 g panko breadcrumbs
450 g large prawns, peeled and deveined
What you’ll need from the store cupboard:
Salt and ground black pepper, as required
¼ tsp. lemon zest
¼ tsp. cayenne pepper
¼ tsp. red pepper flakes, crushed
2 tbsps. rapeseed oil
Instructions:
Preheat the Air fryer to 200 ºC and grease an Air fryer basket. Mix flour, salt, and black pepper in a shallow bowl.
Whisk the egg whites in a second bowl and mix the breadcrumbs, lime zest and spices in a third bowl.
Coat each prawn with the flour, dip into egg whites and finally, dredge in the breadcrumbs.
Drizzle the prawns evenly with olive oil and arrange half of the coated prawns into the Air fryer basket.
Air fry for about 7 minutes and dish out the coated prawns onto serving plates.
Repeat with the remaining mixture and serve hot.
