Lemony Coconut Crusted Salmon

Serves 4
Ingredients:
450 g salmon
70 g plain flour
2 egg whites
60 g panko breadcrumbs
35 g unsweetened coconut, shredded
What you’ll need from the store cupboard:
¼ tsp. lemon zest
Salt and freshly ground black pepper, to taste
¼ tsp. cayenne pepper
¼ tsp. red pepper flakes, crushed Rapeseed oil, as required
Instructions:
Preheat the Air fryer to 200 ºC and grease an Air fryer basket.
Mix the flour, salt and black pepper in a shallow dish.
Whisk the egg whites in a second shallow dish.
Mix the breadcrumbs, coconut, lime zest, salt and cayenne pepper in a third shallow dish.
Coat salmon in the flour, then dip in the egg whites and then into the breadcrumb mixture evenly.
Place the salmon in the Air fryer basket and drizzle with rapeseed oil.
Roast for about 6 minutes and dish out to serve warm.
