Ingredients:

8 (115 g) boneless, skinless chicken thigh fillets, trimmed and cut into cubes

2 large courgettes, sliced

225 g white mushrooms, stems removed

560 g tinned pineapple chunks, drained

Wooden skewers, pre-soaked

What you’ll need from the store cupboard:

1 tbsp. jerk seasoning

Salt and black pepper, to taste

15 ml jerk sauce

 

Instructions:

Preheat the Air fryer to 190 ºC and grease an Air fryer pan.

Mix the chicken cubes and jerk seasoning in a bowl.

Season the courgette slices and mushrooms evenly with salt and black pepper.

Thread chicken, courgettes, mushrooms and pineapple chunks onto pre-soaked wooden skewers.

Transfer half of the skewers in the Air fryer pan and air fry for about 9 minutes.

Repeat with the remaining mixture and dish out to serve hot.
