Curried Chicken and Onion

Serves 3
Ingredients:
450 g boneless chicken, cubed
½ tbsp. cornflour
1 egg
1 medium brown onion, thinly sliced
120 ml evaporated milk
What you’ll need from the store cupboard:
15 ml light soy sauce
60 ml olive oil
3 tsps. garlic, minced
1 tsp. fresh ginger, grated
5 curry leaves
1 tsp. curry powder
1 tbsp. chilli sauce
1 tsp. sugar
Salt and black pepper, as required
Instructions:
Preheat the Air fryer to 200 ºC and grease an Air fryer basket.
Mix the chicken cubes, soy sauce, cornflour and egg in a bowl and keep aside for about 1 hour.
Arrange the chicken cubes into the Air Fryer basket and roast for about 10 minutes.
Heat olive oil in a medium frying pan and add onion, garlic, ginger, and curry leaves.
Sauté for about 4 minutes and stir in the chicken cubes, curry powder, chilli sauce, sugar, salt, and black pepper. Mix well and add the evaporated milk.
Cook for about 4 minutes and dish out the chicken mixture into a serving bowl to serve.
