Beef and Veggie Spring Rolls

Serves 2
Ingredients:
55 g Asian rice noodles, soaked in warm water, drained and cut into small lengths
200 g ground beef
1 small onion, chopped
70 g fresh mixed vegetables 1 packet spring roll skins
What you’ll need from the store cupboard:
60 ml olive oil Salt and black pepper, to taste
Instructions:
Preheat the Air fryer to 175 ºC and grease an Air fryer basket.
Heat olive oil in a pan and add the onion and garlic. Sauté for about 5 minutes and stir in the beef.
Cook for about 5 minutes and add vegetables and soy sauce.
Cook for about 7 minutes and stir in the noodles.
Place the spring rolls skin onto a smooth surface and put the filling mixture diagonally in it.
Fold in both sides to seal properly and brush with oil.
Arrange the rolls in batches in the Air fryer basket and air fry for about 13 minutes, tossing in between.
Air fry for about 15 minutes, flipping once in between and dish out in a platter.
