Ingredients:

680 g potatoes, peeled, cut into 2.5-cm cubes and soaked

1 red bell pepper, seeded and cut into 2.5-cm pieces

1 small onion, cut into 2.5-cm pieces

1 jalapeno, seeded and cut into 2.5-cm rings

What you’ll need from the store cupboard: 15 ml olive oil

½ tsp. taco seasoning mix

½ tsp. ground cumin

1 pinch salt and ground black pepper, to taste

 

Instructions:

Preheat the Air fryer to 165 ºC and grease an Air fryer basket.

Coat the potatoes with olive oil and transfer into the Air fryer basket.

Air fry for about 18 minutes and dish out in a bowl.

Mix together bell pepper, onion, and jalapeno in the bowl and season with taco seasoning mix, cumin, salt and black pepper.

Toss to coat well and combine with the potatoes.

Transfer the seasoned vegetables into the Air fryer basket and air fry for about 12 minutes, stirring in between.

Dish out and serve immediately.
