Peanut Butter Tofu

Serves 3
Ingredients:
For Tofu:
1 (400 g) block tofu, pressed and cut into strips
6 bamboo skewers, pre-soaked and halved
What you’ll need from the store cupboard:
For Tofu:
30 ml fresh lime juice
30 ml soy sauce
15 ml maple syrup
1 tsp. Sriracha sauce
2 tsps. fresh ginger, peeled
2 garlic cloves, peeled
For Sauce:
1 (5-cm) piece fresh ginger, peeled
2 garlic cloves, peeled
120 g creamy peanut butter
15 ml soy sauce
15 ml fresh lime juice
5-10 ml Sriracha sauce
90 ml of water
Instructions:
Preheat the Air fryer to 190 ºC and grease an Air fryer basket.
Put all the ingredients except tofu in a food processor and pulse until smooth.
Transfer the mixture into a bowl and marinate tofu in it.
Thread one tofu strip onto each little bamboo stick and arrange them in the Air fryer basket.
Air fry for about 15 minutes and dish out onto serving plates.
Mix all the ingredients for the sauce in a food processor and pulse until smooth.
Drizzle the sauce over tofu and serve warm.
