Lamb Leg with Brussels Sprouts

Serves 6
Ingredients:
1 kg leg of lamb
1 tbsp. fresh rosemary, minced
1 tbsp. fresh lemon thyme
680 g Brussels sprouts, trimmed
What you’ll need from the store cupboard:
45 ml olive oil, divided
1 garlic clove, minced
Salt and ground black pepper, as required
40 g honey
Instructions:
Preheat the Air fryer to 150 ºC and grease an Air fryer basket.
Make slits in the leg of lamb with a sharp knife. Mix 30 ml of oil, herbs, garlic, salt, and black pepper in a bowl.
Coat the leg of lamb with oil mixture generously and arrange in the Air fryer basket.
Roast for about 75 minutes and set the Air fryer to 200 ºC.
Coat the Brussels sprouts evenly with the remaining oil and honey and arrange them in the Air fryer basket with leg of lamb.
Air fry for about 15 minutes and dish out to serve warm.
