Cheddar Breakfast Pockets

Serves 4
Ingredients:
2 sheets (500 g) puff pastry, cut into
4 equal sized pieces
170 g ground breakfast sausage, crumbled
2 eggs, lightly beaten
115 g cheddar cheese, shredded
What you’ll need from the store cupboard:
1 tsp. coarse salt
½ tsp. ground black pepper
30 ml rapeseed oil
Instructions:
Preheat the Air fryer to 190 ºC and grease the Air fryer basket.
Arrange the sausages in the basket and roast for about 15 minutes.
Place the eggs into the basket and air fry for about 5 minutes.
Season with salt and black pepper and divide the egg sausages mixture over the 4 puff pastry rectangles.
Top with shredded cheddar cheese and drizzle with rapeseed oil.
Place 1 egg pocket in the basket and cook for 6 minutes at 200 ºC.
Remove from the Air fryer and repeat with the remaining pockets. Serve warm and enjoy.
